Wash all vegatables
Mix cabbage and carrots together set aside
Season shrimp with salt pepper and olive oil, set aside
To an egg roll wrapper, in the middle, add a small handful of cabbage/carrot mix
Add to wrapper about 2 tablespoons of the shrimp mix
Add a small handful of bean sprouts to the wrapper
Roll the wrapper to seal in the mixture. Use water on the edges of the wrapper to make sure sides stay sealed
Put egg rolls in air fryer spaced apart and brush with olive oil on both sides
Set the air fryer to 350 and cook the egg rolls for 6 minutes on each side, serve
