At the time of writing this, it’s summer… I know summer isn’t really soup season but I think this one can be an exception…
I actually had the recording of this done back in January. But, with school and the new year, and the end of quarantine, this got pushed to the back. This is one of my favorite soups to make because it’s very quick and involves minimum preparations. Even though it is simple, the flavor is not missing. As I said before this soup is really good for any time of year. It’s not heavy but it is filling. Check out the video and printed recipe below.
Wonton Soup
Servings: 4 Servings
Ingredients
- 32 oz chicken stock low sodium
- 1 Tablespoon Soy Sauce
- 12 oz mini wontons – I use trader joes, frozen
- 1 1/2 – 2 cups Kale fresh
- 1/2 cup chopped white onions
- 1 tablespoon chopped garlic
- 3/4 cup shredded carrots
- 1 teaspoon sesame oil
Instructions
- On medium-High Stir together chicken stock and soy sauce together
- Add wontons and kale to the hot broth mixture and stir to distribute thought out the broth
- Add onions, garlic, carrots and sesame oil and stir to mix and distribute
- Let cook on medium-low for 15 – 20 minutes
- Serve
