I love fall! It means sweaters and hot drinks and soup.
I am a creamy soup person. I love a good cream of crab soup (of course, I am a Marylander). But, you can’t buy crab meat all the time. If I can’t get crab, any type of potato soup will do. I present to you my potato leek soup. But, I like to make mine in the Instant Pot blender. It’s fewer pots and less use of the stove, which is always a plus to me. Potato Leek Soup in the Instant Pot Blender
Ingredients
- 1 large leek
- 2 large potatoes
- 1/2 onion
- 2 cups chicken broth
- 1/4 cup heavy cream
- 3 tablespoons butter
- 1 clove garlic
- 1 jalapeno
- salt/pepper to taste
