Quick and Easy Lunch | Poke Shrimp Bowl

Hey Y’all –

I love poke bowls. Sometimes on my lunch break, I walk up the street and pick one up. But like most people, I can’t spend 14 dollars a day on a bowl of food. Making a bowl at home is pretty easy and not that expensive.

Ingredients

  • 1 cup of rice
  • 1 bay leaf
  • 1 cup vegetable broth
  • Shrimp
  • Edamame
  • Shredded carrots
  • Chopped green onion
  • Bean sprouts
  • Sesame seeds
  • Teriyaki sauce
  • 8 oz frozen mangos
  • 8 oz sour cream
  • Salt/Old Bay
