Hey Y’all –
I am not a vegan. I just want to make that clear. BUT – I do like to make vegan meals off and on. Maybe I’m a carnivore (who doesn’t eat beef) with vegan tendencies….
That being said, I do have some favorite vegan recipes. Fettuccine Alfredo is my favorite and best one. I have seen a lot of recipes for Alfredo where people use almonds to make the sauce. That is not what I do. I already use almonds for my Parmesan cheese, almonds to make a sauce too is too much for me. I use silken tofu and vegan butter to get a flavor that gives a taste of regular cream Alfredo.

Vegan Fettuccine Alfredo
Ingredients
- 1/2 cup nuts I used half sunflower kernels and half almonds
- 1/2 tablespoon garlic powder
- 1/2 tablespoon onion powder
- 1/2 cup nutritional yeast
- 8 oz silken tofu
- 2 tablespoons butter
- 2 tablespoons nutritional yeast
- 1/2 tablespoon garlic powder
- 1/2 tablespoon onion powder
- 1/2 tablespoon parsley
- 1/2 cup almond milk
- salt to taste
