Ingredients

  • 2 cups yellow corn
  • 1 small white onion
  • 2 cups chicken stock
  • 1/2 - 3/4 tablespoon Mexican seasoning I use Everything but the Elote from Trader Joe's
  • 2/3 cups heavy cream
  • salt to taste
  • optional - 3-5 strips of bacon
