In a separate pot or pan, heat the olive oil over medium heat. Add the chopped onion and cook until softened about 5 minutes.
Add the minced garlic and sauté for an additional 1-2 minutes until fragrant.
Add the chopped jarred roasted red peppers, oregano, salt, and pepper. Stir to combine.
Transfer to the Instant Pot Ace Blender.
Secure the lid on the Ace Blender and select the "Soup" program. If your blender doesn't have a specific soup setting, blend on high speed until smooth and creamy.
Once the blending is complete, stir in the ricotta cheese until well combined.
Optional: Heat the soup on the stovetop for an additional 5-7 minutes to meld the flavors.
Adjust the seasoning with more salt and pepper if needed.
Optional: garnish with fresh basil or parsley. Drizzle a bit of olive oil or add a dollop of ricotta on top before serving.
