Roasted Red Pepper Soup (using Instant Pot Blender)

Ingredients

  • 1 jar about 16 ounces roasted red peppers, drained and chopped
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 tablespoon olive oil
  • 4 cups vegetable broth
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste
  • 1/2 cup ricotta cheese
  • Optional Fresh basil or parsley for garnish

Instructions

  • In a separate pot or pan, heat the olive oil over medium heat. Add the chopped onion and cook until softened about 5 minutes.
  • Add the minced garlic and sauté for an additional 1-2 minutes until fragrant.
  • Add the chopped jarred roasted red peppers, oregano, salt, and pepper. Stir to combine.
  • Transfer to the Instant Pot Ace Blender.
  • Secure the lid on the Ace Blender and select the “Soup” program. If your blender doesn’t have a specific soup setting, blend on high speed until smooth and creamy.
  • Once the blending is complete, stir in the ricotta cheese until well combined.
  • Optional: Heat the soup on the stovetop for an additional 5-7 minutes to meld the flavors.
  • Adjust the seasoning with more salt and pepper if needed.
  • Optional: garnish with fresh basil or parsley. Drizzle a bit of olive oil or add a dollop of ricotta on top before serving.
