I know I am posting this in spring….and I know soup is normally a winter food BUT, no one said that you only had to make soup in the winter. I have some soups I like to eat anytime. This tortellini soup is one of them. This, to me, is an anytime soup. It’s easy to throw together and full of veggies. it doesn’t overfill me but it’s a full meal. Creamy Tortellini and Turkey Soup
Servings: 4 people
Equipment
- 1 slow cooker
Ingredients
- 10 oz ground turkey
- 1 cup chopped onion
- 2 cloves garlic chopped
- 1 cup carrots
- 32 oz chicken stock
- 9 oz tortellini
- 2 cups heavy cream
- 8 oz cream cheese
- 1 lb spinach
- 1 tbsp celery seed
Instructions
- Brown turkey in a skillet with some olive oil (you can season with what you like or even salt and pepper)
- Add onions and garlic to skillet – saute till onions start to become translucent
- Add skillet items to slow cooker
- add remaining items to the slow cooker
- Cook on high for 4 hours – serve immedetly
