I don’t always like turning on my oven when it gets warm out. But, I like dessert any time of the year.
A great go-to dessert, especially in the summer, is no-bake cheesecake. It’s easy to throw together and you can make simple adjustments to fit the flavors you want. For example, I do not like a graham cracker crust. So, I use shortbread cookies instead. Sometimes I like a fruit flavor in the cheesecake so I add lemon curd or key lime.
People will think it’s fancy, but it’s one of the easiest things you can make. Check out my video below to see how I make my no-bake cheesecake.
No Bake Cheesecake
- 9 oz shortbread cookies
- 1 stick of butter
- 2 tablespoons sugar
- 2 8 oz packs of cream cheese
- 14 oz condensed milk
- 1 teaspoon vanilla
- 1/4 cup lemon juice
- optional – 1/4 cup lemon curd
